Cudighi escanaba. Aug 10, 2025 · Any “UP-ers” out there? At Rosy’s Dinner in Escanaba, hubs and I were introduced to a local Michigan Upper Peninsula dish called cudighi/cudaghi, a very flavorful sausage made with red wine and warm spices like nutmeg and allspice. Smoked brisket topped with our house made garlic aioli, gouda cheese, battered and deep fried onion strings. Lately, I've been on a mission to master cudighi which is a spicy Italian sausage that can be bought in links or served as a sandwich on a long, hard roll, often with mozzarella cheese and tomato sauce. The word 'cudighi' refers to the sausage itself, but it can also mean a style of sandwich that is popular among Yoopers. It is now primarily found in the Upper Peninsula of Michigan. 1/4 lb local fresh cudighi topped with marinara sauce and shredded mozzarella.
